This hearty Tater Tot Sausage Breakfast Casserole is packed with crispy tots, savory sausage, and gooey cheese. Make it ahead or bake fresh for a comforting start to any morning.
Ingredients
2 lb hot breakfast sausage
1 (30–32 oz) bag frozen tater tots (do not thaw)
1 tsp salt
1/2 tsp black pepper
1/4 tsp garlic powder
1/4 tsp onion powder
1½ cups shredded cheddar cheese
1/2 cup mozzarella cheese
8 large eggs
2 cups milk
Instructions
1. Preheat oven to 350ºF and lightly spray a 9×13-inch baking dish.
2. In a large skillet, cook sausage over medium heat until browned and no longer pink. Drain excess fat.
3. In a large bowl, combine frozen tater tots, cooked sausage, shredded cheddar, and mozzarella. Spread mixture into prepared pan.
4. In a separate bowl, whisk together eggs, milk, salt, pepper, garlic powder, and onion powder.
5. Pour egg mixture evenly over the sausage and tater tots.
6. Bake uncovered for 60–70 minutes, or until eggs are fully set and the top is golden.
7. Let rest for 5–10 minutes before slicing and serving.
Notes
Can be made ahead: cover and refrigerate overnight, then bake with a few extra minutes.
Freezer friendly: assemble, freeze, thaw fully before baking.
Reheat leftovers: cover with foil and bake at 350ºF for 30–40 minutes.
Great for holidays, brunch guests, or even dinner.
