Description

Slow Cooker Tuscan Chicken with a creamy sun-dried tomato and spinach sauce – rich, hearty, and perfect for weeknights or special occasions.


Ingredients

1 ½ pounds boneless, skinless chicken thighs

3 ounces baby spinach

1 cup grated parmesan cheese

1 cup heavy cream

½ cup sliced sun-dried tomatoes in oil

½ cup chicken stock

4 cloves garlic, minced

3 tablespoons unsalted butter

1 tablespoon oil from sun-dried tomato jar

2 teaspoons dried parsley

½ teaspoon dried basil

½ teaspoon salt

¼ teaspoon dried oregano

¼ teaspoon ground pepper


Instructions

1. In saucepan over medium heat, sauté butter, sun-dried tomato oil, and garlic for 20 seconds without browning.

2. Add chicken stock and heavy cream; simmer 8 minutes until thickened.

3. Stir in parmesan cheese; simmer another 3-5 minutes.

4. Place chicken in slow cooker; season with basil, oregano, parsley, salt, and pepper.

5. Top with sun-dried tomatoes; pour sauce over chicken.

6. Cook 3 hours on high or 6 hours on low.

7. Remove chicken, stir spinach into sauce, cover until wilted.

8. Serve with sauce over chicken; store leftovers airtight.

Notes

Freezing: Up to 2 months; cream may separate—whisk to recombine when reheating.

Best for slow cooker: boneless thighs; bone-in works for oven baking.

Cooking preference: low and slow for better flavor, high works if in a hurry.

Serving suggestions: roasted balsamic Brussels sprouts, bacon-wrapped asparagus, cheese mashed cauliflower, grilled broccolini, bacon-wrapped green beans, roasted garlic & rosemary mashed cauliflower, broccoli salad with bacon.
