This slow cooker chicken stew recipe is hearty, flavorful, and perfect for cozy family dinners. Tender chicken, vegetables, and potatoes simmer together for a comforting one-pot meal.
Ingredients
2 pounds boneless, skinless chicken thighs or breasts
3 carrots, diced
3 celery stalks, diced
1 onion, diced
4 medium potatoes, peeled and cubed
4 garlic cloves, minced
4 cups low-sodium chicken broth
2 tablespoons tomato paste
1 teaspoon dried thyme
2 bay leaves
Salt and pepper to taste
1/4 cup flour (optional, for thickening)
Fresh parsley, chopped (for garnish)
Instructions
1. Sear chicken in a hot skillet until golden brown.
2. Transfer chicken, vegetables, potatoes, garlic, and bay leaves to the slow cooker.
3. Season with thyme, salt, and pepper, then stir to mix.
4. Add chicken broth and stir in flour if a thicker consistency is desired.
5. Cover and cook on low for 6–8 hours or on high for 3–4 hours.
6. Taste and adjust seasoning before serving.
7. Garnish with chopped parsley and serve hot.
Notes
Searing the chicken adds depth of flavor but can be skipped if short on time.
The stew can be made ahead and reheated.
Store leftovers in an airtight container in the fridge or freeze for up to three months.
