Description
Spooky skewered salami eyeballs made with mozzarella, olives, bell peppers, and salami. A creepy and fun Halloween appetizer served cold.
Ingredients
1 cup mozzarella balls
2 tablespoons kalamata olives
1 red bell pepper for decoration
4 ounces pepperoni stick
Instructions
1. Use a knife to make small indentations in each mozzarella ball.
2. Finely chop the kalamata olives and press them into the indentations to resemble pupils.
3. Cut the pepperoni stick into pieces approximately 3/4 inch (2 cm) thick and also into thin slices about 1/4 to 1/2 inch thick.
4. Slice the red bell pepper into small wedges for decorative use.
5. Assemble the skewers: start with a red pepper piece, followed by a chunk of pepperoni, a mozzarella “eyeball,” a thick slice of pepperoni, and finish with a few thin pepperoni slices and another mozzarella ball at the base.
6. Refrigerate before serving.
Notes
Mozzarella balls can be fresh or store-bought; just keep the size close to eyeballs.
Kalamata olives are recommended, but green olives, capers, or jalapeños can substitute.
Red bell peppers add color; chili peppers work if you want spice.
Can be made a few hours ahead, wrap tightly and keep chilled.
