Mediterranean Chicken Zucchini Bake (Easy One-Pan Dinner)

Description

A healthy, cheesy, and easy Mediterranean Chicken Zucchini bake made in one pan! Packed with juicy chicken, zucchini, and fresh Mediterranean flavors. Perfect for busy weeknights.


Ingredients

2 boneless, skinless chicken breasts (bite-sized pieces)

2 medium zucchinis (half-moon slices)

1 cup cherry tomatoes (halved)

½ red onion (thinly sliced)

2 cloves garlic (minced)

2 tablespoons olive oil

1 tsp dried oregano

½ tsp dried basil

½ tsp smoked paprika

½ tsp salt

¼ tsp black pepper

¼ tsp red pepper flakes (optional)

½ cup shredded mozzarella or crumbled feta

¼ cup grated Parmesan

2 tbsp fresh parsley (chopped)


Instructions

1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

2. In a large bowl, toss chicken, zucchini, tomatoes, onion, and garlic with olive oil and all seasoning.

3. Spread mixture evenly in baking dish and top with mozzarella (or feta) and Parmesan.

4. Cover with foil and bake for 20 minutes.

5. Remove foil and bake for another 10–15 minutes until chicken is cooked through and cheese is golden.

6. Garnish with fresh parsley and serve warm.

Notes

Cut vegetables evenly to ensure everything cooks at the same rate.

Don’t overbake—chicken should reach 165°F.

Use fresh lemon juice at the end for brightness.

Pairs well with rice, quinoa, or crusty bread.
