Description

Creamy and cheesy loaded baked potato soup made with Russet potatoes, halal meat, cheddar, and sour cream. A hearty one-pot dinner perfect for cozy family meals.


Ingredients

6 strips halal beef or turkey meat (chopped)

1/2 medium sweet onion, chopped

4 large Russet potatoes, diced (peeled or unpeeled)

1/4 cup all-purpose flour

4 cups whole milk (3%)

1 cup chicken broth

1 clove garlic, minced

3/4 cup grated sharp cheddar cheese (plus extra for topping)

3/4 cup sour cream (plus extra for topping)

Chopped scallions (for garnish)

Salt and pepper to taste


Instructions

1. Cook chopped halal meat in a soup pot until crispy, then remove and set aside, leaving about 2 tablespoons of fat in the pot.

2. Sauté the chopped onion in the remaining fat for about 5 minutes until soft.

3. Stir in flour and cook for 1 minute.

4. Gradually whisk in milk until the flour dissolves.

5. Add chicken broth, garlic, and diced potatoes.

6. Bring to a near boil, then reduce heat and simmer with the lid slightly open for 20 minutes until potatoes are tender.

7. Lightly mash the potatoes in the pot if desired.

8. Stir in sour cream, most of the cheese, and most of the cooked halal meat.

9. Season with salt and pepper.

10. Garnish each bowl with scallions, remaining cheese, and halal meat.

Notes

If the soup thickens too much during storage or reheating, thin it with additional chicken broth.

Reheat gently on low heat while stirring frequently to avoid sticking.

Freezing is possible but may slightly alter texture due to potatoes.
