Ingredients
12 oz (340g) smoked kielbasa, sliced into 1/2-inch rounds
1 lb (450g) baby red or Yukon gold potatoes, bite-sized pieces
1 cup (150g) green beans, trimmed
1 large (150g) bell pepper, sliced into strips
1 medium (100g) onion, sliced
2 tbsp olive oil
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp salt (adjust to taste)
1/4 tsp black pepper
1 tbsp fresh parsley, chopped (optional garnish)
Instructions
1. Wash and cut potatoes; slice kielbasa; trim beans; slice pepper and onion.
2. Combine potatoes, kielbasa, beans, pepper, and onion in a bowl; drizzle olive oil; add paprika, garlic powder, salt, and pepper; toss to coat.
3. Oven Method: Preheat oven to 400°F (200°C), spread on baking sheet, roast 25–30 min, stirring halfway.
4. Stovetop Method: Heat skillet over medium heat, cook 20–25 min, stirring occasionally.
5. Garnish with parsley and serve hot.
