Description
A spooky Halloween mac and cheese with mozzarella ghost toppings. Creamy, cheesy, and festive, this ghoul gheroni and cheese is perfect for parties, themed dinners, or kids’ lunches.
Ingredients
8 oz elbow macaroni (uncooked)
2 tbsp butter
2 tbsp all-purpose flour
2 cups whole milk
2 cups shredded sharp cheddar cheese
1/2 cup grated Parmesan
Salt and pepper to taste
6 slices of mozzarella cheese (cut into ghost shapes)
Black sesame seeds or black peppercorns (for ghost eyes)
Olive oil or butter (to grease baking dish)
Instructions
1. Boil macaroni in salted water until just tender, then drain.
2. In a saucepan, melt butter and whisk in flour; cook for 1 minute.
3. Gradually whisk in milk until smooth and thickened, about 3–4 minutes.
4. Remove from heat and stir in cheddar and Parmesan until melted. Season with salt and pepper.
5. Mix cooked macaroni with cheese sauce until evenly coated.
6. Grease a baking dish and pour in the mac and cheese.
7. Place mozzarella ghost shapes on top and gently press them flat; add sesame seeds or peppercorns for eyes.
8. Bake uncovered at 375°F for 20–25 minutes until bubbly and lightly golden.
9. Cool slightly before serving so the mozzarella ghosts remain visible.
Notes
Avoid overcooking pasta to prevent mushiness during baking.
Don’t skip the roux step; it thickens the sauce.
Add mozzarella right before baking to maintain its ghost shape.
Season the cheese sauce well to enhance flavor.
