Ingredients
4 boneless, skinless chicken breasts
1.5 pounds baby potatoes, halved
1 cup chicken broth
1/2 cup grated parmesan cheese
4 cloves garlic, minced
1 tablespoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon red pepper flakes (optional)
2 tablespoons olive oil
Fresh parsley for garnish (optional)
Instructions
1. Wash and halve the baby potatoes. Mince the garlic.
2. Coat chicken with olive oil, Italian seasoning, salt, pepper, and optional red pepper flakes.
3. Layer the potatoes at the bottom of the crockpot.
4. Place seasoned chicken on top.
5. Pour chicken broth evenly over the contents.
6. Sprinkle minced garlic and parmesan cheese on top.
7. Cover and cook on low for 6–7 hours or on high for 3–4 hours.
8. Ensure chicken reaches 165°F and potatoes are tender.
9. Serve with broth drizzled on top and garnish with parsley.
Notes
