Sausage Egg and Cheese Breakfast Roll-Ups (Easy Morning Favorite!)

Description

A handheld breakfast wrap filled with scrambled eggs, sausage, and cheddar cheese wrapped in a flour tortilla.


Ingredients

8 large eggs

Salt and pepper to taste

1 tablespoon milk

1 tablespoon butter

8 breakfast sausage links

8 flour tortillas (8-inch)

1 cup shredded cheddar cheese

Cooking spray


Instructions

1. Whisk eggs with salt, pepper, and milk until smooth and frothy.

2. Cook eggs in butter over medium heat, gently scrambling until just set; remove from heat.

3. In a separate skillet, cook sausage links over medium heat until browned and fully cooked.

4. Spray a skillet with cooking spray and warm over medium heat.

5. Lay tortilla flat, add a spoonful of scrambled eggs in center.

6. Add 1 sausage link lengthwise on top of the eggs.

7. Sprinkle with shredded cheddar cheese.

8. Roll tortilla tightly, folding in sides to enclose filling.

9. Place seam-side down in skillet and cook 2–3 mins per side until golden and crisp.

10. Let rest briefly before serving. Repeat for all roll-ups.

Notes

Optional add-ins: chopped scallions or bell peppers.

Cheese swaps: try Monterey Jack or pepper jack.

Make-ahead: wrap in foil and reheat in microwave or oven.
