Ingredients
6 cups peeled and diced potatoes
1 cup shredded cheddar cheese
1/2 cup cooked and crumbled bacon
1 packet ranch seasoning mix
4 cups chicken or vegetable broth
1 cup heavy cream (or half-and-half for lighter option)
Salt and pepper to taste
Optional toppings: extra cheese, bacon bits, chopped green onions or chives
Instructions
1. Peel and dice potatoes into uniform pieces.
2. Place potatoes in the bottom of the crock pot.
3. Sprinkle ranch seasoning over potatoes.
4. Add shredded cheddar and crumbled bacon.
5. Pour broth over the ingredients until just covered.
6. Cook on low for 7–8 hours or high for 4 hours, until potatoes are tender.
7. Stir in cream, season with salt and pepper.
8. Blend partially or fully if smoother texture is desired.
9. Serve hot with optional toppings.
