Ingredients
2 boneless, skinless chicken breasts
4 cups chicken broth
1/2 cup heavy cream
1 pound potato gnocchi
2 cups fresh spinach
1 small yellow onion, diced
3 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Place chicken breasts, chicken broth, diced onion, garlic, salt, and pepper into the Crockpot.
2. Cook on low for 6–7 hours or on high for 3–4 hours until chicken is cooked through.
3. Remove chicken and shred it using two forks.
4. Return shredded chicken to the Crockpot and add gnocchi, spinach, and heavy cream.
5. Cover and cook on high for another 20–30 minutes until gnocchi is tender.
6. Taste and adjust seasoning if needed.
7. Serve warm with fresh bread or a sprinkle of Parmesan.
Notes
For extra richness, stir in more cream or grated Parmesan before serving.
Leftovers can be refrigerated for up to 3 days — just reheat gently on the stovetop.
You can use frozen gnocchi, just add 5–10 minutes extra cook time.
