Ingredients
2 large croissants, halved
1 cup cooked chicken breast, shredded
1/2 cup Caesar dressing
1/4 cup freshly grated Parmesan cheese
1 cup Romaine lettuce, chopped
8 cherry tomatoes, halved
Salt and pepper to taste
1 tbsp olive oil
2 tbsp unsalted butter
Instructions
1. Combine shredded chicken and Caesar dressing in a bowl until coated.
2. Heat olive oil in a skillet, cook chicken mixture for 3–5 minutes.
3. Cut croissants in half; butter the inside with unsalted butter.
4. Toast croissants in skillet, buttery side down, until golden brown (~2 minutes).
5. On bottom croissant halves, layer chopped Romaine.
6. Add warmed chicken mixture.
7. Sprinkle Parmesan cheese.
8. Add halved cherry tomatoes.
9. Season with salt and pepper.
10. Top with other croissant half, press lightly.
11. Serve immediately.
Notes
Marinate chicken overnight in olive oil, lemon juice, garlic, salt, and pepper for extra flavor.
Use leftover grilled or roasted chicken as a substitute.
Add avocado slices for creaminess.
Whole wheat croissants make a healthier version.
Store assembled sandwiches in the fridge for up to 24 hours, but keep lettuce and tomatoes separate if prepping ahead.
