Description
A cozy, flavorful crockpot meal with tender potatoes, smoky kielbasa, and gooey cheddar cheese. Easy prep, hearty taste, and perfect for busy days.
Ingredients
3–4 medium russet or Yukon Gold potatoes, washed, peeled, cubed
14 oz smoked kielbasa, sliced bite-sized
2 cups shredded sharp cheddar cheese
1 can (10.5 oz) cream of chicken soup
1 tsp onion powder
1 tsp garlic powder
Salt and pepper to taste
Optional: peas, corn, or extra vegetables
Instructions
1. Wash, peel, and cube the potatoes into even, bite-sized pieces.
2. Slice the kielbasa into bite-sized rounds or half-moons.
3. Layer half the potatoes, half the kielbasa, and half the cheese in the crockpot. Repeat with remaining ingredients.
4. In a bowl, mix cream of chicken soup, onion powder, garlic powder, salt, and pepper. Pour evenly over the layers.
5. Cover and cook on low for 6–8 hours or high for 3–4 hours, until potatoes are tender.
6. Stir gently before serving and let rest for 5 minutes.
Notes
Use fresh potatoes for the best texture.
Avoid overcrowding the crockpot for even cooking.
Add herbs or extra vegetables for variety.
Store leftovers in an airtight container in the fridge for up to 3 days.
