Description

Spooky cheeseburger skulls with buttery homemade buns, juicy beef patties, melty cheese, and Halloween flair. Perfect for parties or family dinners.

Ingredients

Scale

3½ cups (420g) all-purpose flour

1 tablespoon (9g) instant yeast

¼ cup (50g) granulated sugar

1 teaspoon salt

5 tablespoons (56g) salted butter, softened (divided)

1 large egg

¾ cup (170g) lukewarm water (100-110°F)

32 ounces 80/20 ground beef

Salt and pepper to taste

8 slices white cheese (American, cheddar, provolone, Havarti, etc.)

Optional toppings: ketchup, lettuce, tomato, mustard, mayonnaise, onions, pickles

Instructions

1. Mix flour, yeast, sugar, salt, 2 tablespoons butter, egg, and warm water until blended. Knead 5–7 minutes until smooth.

2. Cover and let dough rise 1–2 hours until doubled.

3. Grease skull pan cavities with 1 tablespoon butter. Divide dough into 8 pieces (95g each). Press into pans.

4. Cover and let rise 1 hour. Preheat oven to 375°F.

5. Bake 14–18 minutes, rotating pans halfway. Cool and brush with 2 tablespoons melted butter. Slice when fully cooled.

6. Form ground beef into 8 patties, slightly larger than buns. Season with salt and pepper.

7. Cook patties in skillet 3 minutes per side. Top with cheese and cover to melt.

8. Slice buns, assemble burgers with patties and toppings. Serve warm.

Notes

To reheat, cook burgers rare (120°F), refrigerate, then warm at 350°F for 5 minutes.

Use fattier beef (70/30 or 73/27) if reheating.

Divide dough into 10 pieces (75g) for thinner buns.

Cheese slices can be cut into skull shapes with a cookie cutter.

Buns can be made 3 days ahead or frozen for 2 months.
