Description

Sweet, savory, and slightly spicy Crock Pot Bourbon Chicken made with tender chicken thighs simmered in a sticky sauce. Easy, family-friendly, and perfect for weeknights.


Ingredients

3 pounds boneless, skinless chicken thighs

1 cup light brown sugar

1 cup soy sauce

⅓ cup bourbon whiskey

2 tablespoons apple cider vinegar

½ teaspoon ground ginger

1 tablespoon honey

½ teaspoon red pepper flakes

4 cloves garlic, minced

3 tablespoons cornstarch

2 tablespoons water

¼ cup chopped green onions


Instructions

1. Place trimmed chicken thighs in a slow cooker.

2. In a bowl, whisk together brown sugar, soy sauce, bourbon, vinegar, honey, ginger, garlic, and red pepper flakes.

3. Pour the sauce over chicken and cover.

4. Cook on high for 4 hours or low for 6 hours.

5. Remove chicken and roughly chop.

6. Mix cornstarch and water until smooth, then stir into the sauce in the slow cooker.

7. Return chopped chicken, stir, and heat until bubbling.

8. Turn off the cooker and garnish with green onions before serving.

Notes

The alcohol in bourbon cooks off during slow cooking.

For a non-alcoholic version, substitute bourbon with apple juice or chicken broth.

Chicken breasts may be used instead of thighs; cook whole and shred after.

Add ketchup for extra flavor.

Sprinkle toasted sesame seeds or extra red pepper flakes for added texture or spice.
