Description
Juicy BBQ chicken thighs baked in the oven with pantry spices and finished under the broiler for a sticky, caramelized glaze. Perfect for weeknight meals with big flavor and easy cleanup.
Ingredients
2 pounds boneless skinless chicken thighs
2 tablespoons avocado oil
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1/2 teaspoon dried mustard
1 cup BBQ sauce (plus more for serving)
Instructions
1. Marinate chicken with avocado oil, salt, pepper, garlic powder, onion powder, smoked paprika, and dried mustard. Refrigerate for at least 1 hour or overnight (optional but recommended).
2. Preheat oven to 425°F. Line a large baking sheet with parchment paper, foil, or a silicone mat.
3. Toss chicken with 1/4 cup BBQ sauce (reserve rest). Place on lined sheet, discard excess marinade.
4. Bake for 15 minutes, flip, brush with reserved BBQ sauce, and bake another 10 minutes.
5. Set oven to broil. Flip chicken again, brush with more sauce for a glaze, and broil 5–6 minutes until crispy and cooked through.
6. Serve hot with extra BBQ sauce if desired.
Notes
Use a rimmed aluminum sheet pan and always line it for easy cleanup.
Watch closely during broiling if using parchment to avoid burning.
Store leftovers in the fridge for 3–4 days.
Reheat in a 350°F oven or microwave for 1–2 minutes.
To make Whole30 or paleo, use a compatible BBQ sauce.
No baking rack needed—just the lined pan.
